Every brisket starts with USDA Prime beef from Creekstone Farms via Pat LaFrieda — the same supplier used by the best steakhouses in New York City. Every rack of ribs is heritage-breed Berkshire pork. Every rub is made in-house.

Pitmaster Leland Avellino spent two decades in professional kitchens — including a run as Corporate Executive Chef at Dinosaur BBQ Stamford — before going all-in on his own operation in 2020. Our Story

Built on smoke,
family, and a
driveway in Stamford.

In 2020, Leland Avellino — Corporate Executive Chef at Dinosaur BBQ, two decades in professional kitchens — walked away to do things his way. He set up an offset smoker on his driveway and started selling to the neighborhood. No marketing. No grand opening. Just smoke and word of mouth.

The neighbors kept coming back. Then their friends came. Then the food truck. Then a catering operation that fills up months in advance. Then Brisket King NYC. Then the restaurant at 487 Glenbrook Rd.

Six years. One standard: make it right or don't make it at all.
